I want to map the delete key to a button on the APC40.

yes, you need something that will intercept the midi message of the APC40 (Bomes, midi pipe, control aid) and turn it into a keystroke or listen to the control surface (Max4Live) and do a similar job...

I've installed MIDI pipe. Any chance of a talkthrough how to map the delete key? On Mac there is midiStroke – very useful little program:

Beware though, that "Delete" is a keystroke, which deletes what is currently marked as selected in the GUI – and this is not necessarily what you think is selected. E.g. if you have a clip selected and then launch a scene (even via a Control Surface), the whole scene is selected and when you hit "Delete" now, the whole scene gets deleted. But try it for yourself, it might work better for you.
