I'm running two mono signals out from my laptop to my audio interface to my in ear monitor, and then to this mixer. And all this thing has is RCA inputs (except for the mic XLR's which I've been told shouldn't take line level signals), so I'll be using XLR to RCA adapters. If you look at the picture, you'll see there are 4 inputs per channel. Do I just pick a random input from 1 of the 4 on two different channels or what do I do? Thanks.

According to the picture, there are four inputs (two stereo pairs) per channel, and a switch per channel that appears to select between them. This appears to be for keeping phono and line level inputs separate. I just glanced at the pictures though, and didn't read the manual or anything, so you may want to double-check me.
Since you're going from your computer and not turntables, use the Line inputs on each channel and set the input switch appropriately.
