Amplitude Question

I have two questions, in order of importance:

1) Is there a way to keep the amplitude the same in a track regardless what effect we add? In other words, Is there such a plugin that analyses the desired output signal and maintains this desired output signal regardless of any changes we might do to the track?

2) Is there a way to force the amplitude of a sound - in this case a soundscape recording - to sustain at the same amplitude over time? In other words, I record the sound of a kitchen, I want to tweak the amplitude of the sound so I end up with a slow crescendo from beginning to end. If there is a plate dropping on the floor or any loud sounds, they should not be louder that the other sounds.

You mean like a limiter? You can use a combo of a compressor and a limiter (or just a limiter, I guess) to level out all the sounds of the kitchen, and then automate volume or gain to create your crescendo.
