Connect hardware synths

Because I love the sound of older hardware synths, so I've just purchased a Roland JV2080 and a E-MU Virtuoso 2000. Both are midi-modules.

OK, I connect the midi-cables between my PC and the modules, but how can I explain to Live! that there are multitimbral units out there and how can I access the 16 channels? Do I need some drivers?

Connect some audio cables between your hardware synths and your soundcard/mixer.
Insert an external instrument device on a midi track and choose the correct midi out and audio in devices.
Use different midi channels to play the hardware synths multitimbral.
Check the manuals of the synths which channels are used and how to use the multi mode.

I use Ableton Live! How can I select from within the DAW the patch that I want to use, so that the midi-file saves also that information.

In the past I have worked with the Yamaha Motif XS's internal multitimbral soundmodule and then I had to save locally on the synth all patches and mixing info on a USB-stick. Do I have to do the same with the JV 2080?

MIDI bank and program change messages can be sent from Live, assuming there's nothing unusual about either synth, but the actual programs themselves will almost certainly need storing on the synth. It might be worthwhile searching to see if anyone has made software editors for the synths, that can make programming synths that otherwise require lots of menu-diving much easier.
