Be careful when you delete Live, place your projects in a new folder outside of the main folder. I had a very bad experience when I did that move when I first installed Live Suite (my first year of music making on Ableton down the drain...)

First suggestion is always make backups before doing anything you are unsure of. That's the smart approach.
Projects and other content files should NEVER be installed with your main program and should be kept in a separate User folder so you will not have issues.
When you uninstall Live it will remove the program but will leave your User Librray and also your Preference files behind.
Each version of Live has its own preference files so installing a new version means you have a unique preference set for that install.
The only thing to be aware of is the factory library content may get uninstalled if you remove the other version but I am pretty sure Lite doesn't have all that so should be fine to uninstall it and if there is an issue after that, just reinstall the other version again which should fix up anything that went missing.
Backups tho... get onto that...
