set in advance an empty audio clip of 5 beats in 4/4 time signature project

Hello,
In Ableton Live Suite 11 I would like to record loops with different lengths.
for example in a 4/4 time signature project,
I would like to record a clip of 5 beats
then the next clip 3 beats and so on during a live performance.
On Loopy Pro it's super easy.
You set in advance the recorded length of the donut (clip)
You can choose from 1 triplet to 8th note 1 beat 2 beats 3 beats 4 beats and so on.
How can I do it in Ableton Live?
I found a video Binkbeats explaining that he used the Looper without quantization

I don't fully understand how he does it but I wish future version of Ableton LIVE
will make this kind of function more easy to do.
