You can create a default template and pre-disable it that way: File > Save Live Set As Template
You can also right click on Audio and MIDI tracks and ‘Save As Default Audio/MIDI Track’
Both methods work for adding 3rd patty plugins too, like a channel strip (or something you might want on every track) and/or alternative routing, names, etc.
