Drawing Fades and automation

Two things I am curious about and have yet to figure out. Could some one let me in on how to draw fades? And how do you wipe out automation without loosing original settings? Say for instance you for some reason felt you should move somethings while recording the clip into the Arranger view, how would you disable all automation written from that blunder? Thanks for you help...
