When I render to disk the song renders to a "document" and not a quicktime aiff like it used to...

Sounds like you're running OS 9, but I'm not sure.
If you are, restart your computer and hold down the Option and Apple keys until the Desktop appears.
Then you'll be asked if you want to Rebuild The Desktop. Click OK.
There's a database of associations between file types and applications used to open those file types called the Desktop DB file. If the file is corrupt, then you'll see "generic" document icons instead of the usual QuickTime or other icons you'd expect for AIFF files.
Rebuilding the associations with the key combination above will fix the generic icon issue.
