How can I get a stereo signal into Live when recording a guitar or one microphone? Since these are both mono sources, I wonder if it could be done

Some guitar amps have stereo out (e.g. Hughes&Kettner's ZenTera), otherwise you'd have to make them stereo in a sound editor I suppose....
But if there isn't any stereo information (delays etc) in that track, why would you want it to be?
Logic has plugins that make a mono signal appear wider, if that is what you want use them....and reimport into live.

In the track input/output menus of the session view (pages 51-52 of the manual,) the middle pull-down menu allows you to sellect which inputs to use. The default setting uses inputs 1 and 2 as a stereo pair, which results in your mono signal coming out of the left speaker only if it is jacked in to channel 1, or the right speaker only if it is jacked into channel 2. But there are options for mono inputs as well, so that your mono signal is split to both sides of the stereo field.
I do this with my guitar and bass, and I've had no problem using both stereo and mono plugs in my chain. Of course if you put a mono plug after a stereo one, you will loose the stereo effect. That's just an audio engineering issue, and not a Live issue specifically.
