Sending midi data to individual midi channels?

this is not so much a live - specific question, more of a general one

say for instance i'm using a midi controller (in my case a novation remote sl 25) over usb with any DAW you could think of (live / logic for me)

now say i want to program different sounds / instruments on DIFFERENT midi channels, like for instance with Edirol Orchestral:

1. First Violins on MIDI Channel 1
2. Second Violins on MIDI Channel 2
3. Percussion on MIDI Channel 3

What i'd like to know is how to transmit MIDI data seperately to these channels to i can write individual midi parts for them, rather than the midi controller sending to all channels at once, or just to midi channel 1 as i've had in the past.

any ideas fellerrrrrs? (and ladies as well!)
