Using a 100% digital/MIDI/plugins setup, I'm looking for tips on how I could achieve more of a recorded type of sound, with some "listeners distance" to the instruments, something like a typical classical chamber music recording.

A convolution reverb and some impulse responses recorded in the kind of space your after would definitely help. If your on pc you can still get 'Sir' free I think, which is supposed to be a pretty good one, then just search google for impulse response sources like www.noisevault.com.

A lot of studios I know have more or less stopped using reverbs, and switched to complex (or just weird) delays.
That feeling of distance or space in the sound can be acheived in all manner of ways, but reverbs/delays is a good place to start.
Next: speaker emulation.
then: Room recordings. As in, record a room without any sound in it. That usually adds some cool ambience to a track.
