After a bunch more experimenting, I've found that using the AU version of the UAD plugin rather than the VST version fixed this issue. Still weird that it exist though, but I can live with this solution.

Interestingly enough it's only the 'Sounds' tab for me too, every other tab is snappy including the 'All Results' tab which includes Sounds.

While Ableton is perfectly capable of exporting video, it isn't one of it's focuses, so there may be a few wobbly bits about video exporting. That being said, I'd try using a different codec for exporting video. What codec are you using right now?
