If you can't learn anything from watching Eno and Lanois in action on a production, whether it's U2, or anyone else, thenThanks be to sweet fuck we didn't have to endure god awful technical walk-throughs of U2 tracks
you shouldn't be making music IMO.
I'm not a huge U2 fan either - but their VH1 Behind The Music, along with Nirvana's 'Nevermind', Jimi Hendrix's 'Are You Experienced?' and Fleetwood Mac's 'Rumours' are essential viewing for anyone who wants to learn about good production and engineering values. On the other hand, if you're content with your badly mixed, badly arranged bedroom produced music and you think you're King Shit and know everything, then you don't need to bother.
Eno and Lanois are the real deal in terms of producer masterclass. The fact they produced some work with U2 is not an important consideration, they've worked with dozens of artists from many different genres and it would just as valid to watch them working with Peter Gabriel, Willie Nelson and The Neville Brothers as U2.
