I can look on Google and see many people that are working on simple FTIR designs which IMHO are not practical and are only really useful for developing the software interface (they need some HW to play with).

Yes i already work on FTIR its not reliable for clubs, some emiters of IR light like big 2kw flash cause big interferences, you need projector, the size its very big etc etc, like you say FTIR its not practical but is absolutly easy to do : ) and cheap !!
Now im working on dual sensor with multile grid, i think lemur do on that way with mix of capacitive and saw.
One ingenier friend its joined to helpme for see if we can finally make this work like real and curate and relaible multitiuch.
Time ago i work with cheap saw from china, with support of intelectual judgement of 2 touches, using that can sense to points but its a little slow, and some time erratic.
Software used for enable aplicaiton to work with 2 touches: cpnmouse, microsot MultiMouse SDK, testing some linux things, and waiting the new osx its suposed support multiple pint devices or multitouch not big info form apple just rumors.
