should i defferentiate the attacks of each track or would recording different takes without quantization suffice?

hey guys, noob booby over here with yet another question.
does anyone know how to get that dramatic orchestral sound/feel (the illusion that there's multiple instruments playing a given tune)? i'm not talking about just "shocks." i've added reverb and opened mutiple tracks playing the same violin ...

haha...gear. what gear? i'm a headliner for amateur hour. i have a laptop and a pad kontrol. that's it. oh i have some super killer rad headphones too if that helps. they're shiny even. silver!
