You can chance speed by changing the pitch unwarped, but I have a feeling that changing the pitch would make it not ideal for practicing an instrument. Warping is what you need to do. And in this case it’s pretty simple once you have the method sorted out. I feel like you were actually pretty close....

Well, if you make a simple device that sends Sustain Off at the press of a button, and put it inside each chain, before each instrument,
You can map that Button to the same macro that does chain select. You could probably even do an all notes off command on that same button.

If you switch back to it and press and depress sustain, it will no longer be forever. When you switch away from that instrument, you’re stopping all midi from being sent to it. Either hit stop, and then do the count in, or adapt to the method of doing it while clips are playing.
Takes a little practice and wrapping your head around it, but trying to have it both ways starts verging on Live either becoming psychic or bending the fabric of time and space.

I think you’d need Live 10 at least. I think Live 9 is behind a bit in macOS versions for support, being as old as it is.
