1. Is there any way I can change pitch bend parameters for a sound I want to alter with my controller wheel? I like to use the wheel sometimes for fifth's ...

Using the utility like that should definitely eliminate all stereo shenanigans. But if it sounds panned regardless, it's possible that the track itself is not centered. Or you have some return effects applied to the track.

One way to work around it is to buy a USB hub with a power switch.

Yes, the follow actions work pretty nicely for this and it's not that painful to set up either IMO. You can also set the clips to always have a 1/16 quantization regardless of the global quantization.

In arrangement view you can use the punch-in and punch-out switches to prevent recording before/after the song looping points. The buttons can be found on the top, next to the song loop on/off switch.
