Using the utility like that should definitely eliminate all stereo shenanigans. But if it sounds panned regardless, it's possible that the track itself is not centered. Or you have some return effects applied to the track.

Yes, the follow actions work pretty nicely for this and it's not that painful to set up either IMO. You can also set the clips to always have a 1/16 quantization regardless of the global quantization.

I don't think Live's video support could be called "video mixing" by any means. I believe it's mostly meant as a helper for scoring soundtracks and such. You can basically drag&drop a video clip on an audio track in the arrangement view and have the video play on a window. Pretty much the only ...

3dsmax, Maya, Softimage (aka XSI) and Blender are all viable options, each with their own set of strengths and weaknesses. In arrangement view you can use the punch-in and punch-out switches to prevent recording before/after the song looping points. The buttons can be found on the top, next to the song loop on/off switch.
